The ram will provide a nice boost for cheap, Windows 7 64-bit can drain quite a bit of ram and with over 6GB it can take over half your ram.
The SSD will obviously really increase boot times and give you an overall more responsive computer, but you won't notice it gaming, bar loading screen or games that load assets on the fly (Diablo 3).
The extra 560 could help, but I can't imagine you have too many fps issues in game due to you video card setup... So I think currently the extra 560 would be a be a $230 payment to turn a few poorly optimized games from high to ultra...
Go with the RAM, you don't even need 16 GBs of it, 8 GBs usually is plenty for gaming use. You have 6 GB currently so I assuming you have triple channel ram support and 3, 2GB sticks of ram. Unfortunately I see your MoBo only has 4 slots (very odd for a triple channel set up) so this means (assuming I was right about the 3x2GB setup) if you want to save money, get either:
-1x 4GB stick and put it in the blue RAM slot (10 GB ram),
-or get 2or3x4GB and replace some of you 2GB sticks.
-But if you are really just looking to blow some cash, go ahead and grab the 4x4GB, which only costs around $100 anyway.

I tend to agree with Beiufin. I would try and get your ram up to 8 gig or more and go for the SSD. While the SSD may not increase FPS, it will decrease your wait time making you happier with your computer.
Click, boom, open. Really for me, the move to SSD is the greatest advance in computing since the mutit-core processor.
I would spend the $100 on a 4 x 4 gig kit, but I once owned a Harley Davidson, so a Hundred Dollars is a normal upgrade. You could easily get away with an additional 2 gigs and not worry about spending the money....... save it for the GTX 780.

Thanks for the advice, guys. Here is a follow up on what happened:
Bought a OCZ Vertex 3, would not recommend sandforce SSDs with this mobo, it caused bluescreens. I think I'll just put it in my PS3 and get a samsung instead.
Also bought a 4gb stick of ram and stuck it in the off color slot. This too turned out to be a mistake, as the triple channel ram wasn't happy about having a 4th wheel. Bluescreens. memtest86+ passed for every stick alone but together they failed. Ended up buying a corsair vengeance 12gb triple channel kit instead ($100) and replacing the whole shebang.

Wish I caught this sooner, because I knew about the Triple Channel LGA 1366 and the OCZ problems. Then I saw the date of the original posting and finally it was met with an answer today.
Also, OCZ Vertex 3 is not recommended for ANY COMPUTER. It has serious reliability issues, and it is best known for absolute failure. Crucial M4 and Samsung 830 is recommended due to reliability.
